This guide presents many of the most common procedures and techniques for extracting quantitative

microstructural information about food from images. Russ (materials science and engineering, North

Carolina St. U.) discusses stereology, image acquisition, processing, and enhancement, binary images,

and measurement tools, in an effort to reveal the ways macroscopic light photography, confocal light

microscopy, and electron microscopy, among others, can reveal the chemical composition,

thermo-mechanical processing, and genetic and structural properties of different foods. Most of the

techniques described can be performed using commerically available software, but the author refers

readers to software manuals to learn the technical details; his emphasis instead is on the underlying

concepts and visual interpretation of results. Furthermore, he emphasizes that the only way to learn

this stuff is to do it. The book includes numerous photos of foods and their structures, in both b&w

and color.
